Soup Season is upon us and while I absolutely LOVE tomato basil soup, I have never tried to make it myself. It turns out that it’s actually incredibly easy to make and it’s budget friendly too! Oh, how I love a good TikTok recipe discovery!
First things first, and this is the golden rule, roast your veggies! You can boil them with some vegetable broth if you like, BUT by roasting them you’re bringing out those incredibly sweet flavours which balance out the tartness in the tomatoes. I roast my tomatoes, some carrots, onions and garlic for around 40 minutes on high heat or until it’s soft.
From there I transfer them to my blender, add in the fresh basil, some cream, and veggie stock and blend to my ideal consistency. I don’t mind it chunky, but for the sake of my husband and toddler, I blend it super smooth and serve with some fresh olive ciabatta.
