Never in my life did I think that Summer time in London could be as warm as it is and when it’s so warm, who has time for cooking in front of the stove?! Below are some of my favourite salads to whip up whether it be a quick dinner after work, a casual weekend lunch or as the only bit of green you’ll find at a South African braai.
CORN AND AVOCADO
I can easily devour a bowl of this salad for dinner, but my husband isn’t satisfied unless it’s accompanied by a piece of chicken. Regardless, it’s super light and healthy and so quick to put together. You’ll need a cup of corn, 1 large avocado, half a red onion, cherry tomatoes and a dash of homemade lemon and olive oil salad dressing. Many people also enjoy adding in coriander, but unfortunately we’re just not one of those households.
BACON AND EGG
A protein packed twist on a traditional greek salad. Cut some hard boiled eggs in half, dice and fry up a pack of bacon, toss in some spinach, cherry tomatoes, cucumber, yellow bell pepper, and finally top it off with the bit of magic that always finishes a salad off nicely, 1 large avocado.
WATERMELON AND FETA
It doesn’t get more Summery than this and I’m honestly surprised that not more people have heard of this salad. I first had it at my mother in laws place and I fell in love instantly. The sweetness of the watermelon combined with the saltiness of the feta and the freshness of the cucumber leaves you feeling refreshed and satisfied. It’s a perfect accompaniment at a braai or as a starter before lunch or dinner. The only ingredients needed for this are watermelon, feta cheese, cucumber, a small bed of lettuce and finally, the secret ingredient to tie it all together, balsamic vinegar. I also love sprinkling mixed seeds over all my salads for some extra crunch.
